It is Tuesday and here is the video I promised!! I made this Saturday when my hand was feeling much better. I won't tell you how my hand/arm feels today or you might want to lecture me on taking it slow. Believe me, I've learned my lesson and am going to relax my arm completely today. In fact, I just took all my kids to school and think I will lay down for a short nap. I woke up today with sharp pains in my hand, which probably means it is in the healing process. You know how it usually gets worse right before it gets better? I will be fine, so no worries about me!! I have a lot of help around here.

Today I am going to share some super YUMMY Chocolate Cupcakes I made last night. Making cupcakes is so therapeutic for me. Just the entire process. I made my kids wait until AFTER dinner to have one. Isn't that good parenting? LOL! They usually pop one in their mouth after I make them on Sunday, since I tend to make cupcakes a lot on cupcakes to take around to our friends and neighbors.
My wrist and hand are still healing and kind of painful. Hopefully they will get back to normal soon but in the meantime I will learn patience and also how to use my left hand more. :)
I filmed a video for you guys on Saturday (one handed) and I will get that edited and up for you guys bright and early tomorrow morning.
For the cake:
2½ cups cake flour
1½ cups sugar
1 tsp. baking soda
2/3 C. cocoa powder
1 tsp. salt
2 large eggs
1½ cups vegetable oil
1 cup buttermilk
1 tsp. vanilla extract
1 tsp. distilled white vinegar
For the frosting:*
8 oz. cream cheese
5-7 tbsp. butter, at room temperature
2 tsp. vanilla extract
2½ cups confectioners’ sugar, sifted 3-5 Tbsp cocoa powder 2-3 Tbsp milk
Preheat the oven to 350° F. Line cupcake pans with paper liners. In a medium bowl, combine the cake flour, sugar, baking soda, cocoa powder and salt; whisk to blend. In the bowl of an electric mixer, combine the eggs, vegetable oil, buttermilk, vanilla and vinegar. Beat on medium speed until well blended. Mix in the dry ingredients on low speed and beat until smooth, about 2 minutes. Divide the batter evenly between the prepared liners. Bake, until a toothpick inserted in the center comes out clean, about 18 minutes. Let cool in the pans 5-10 minutes, then transfer to a wire rack to cool completely.
To make the frosting, combine the cream cheese and butter in the bowl of an electric mixer. Beat on medium-high speed until well combined and smooth, about 2-3 minutes. Mix in the vanilla extract. Add the cocoa powder. Gradually beat in the confectioners’ sugar until totally incorporated, increase the speed and then beat until smooth. Add milk to desired consistency.
Frost cooled cupcakes as desired. (I used a large, unlabeled star tip to frost these cupcakes.)
I wanted to do a quick update on what's been going on this past week. Some of you saw on my Facebook Page that I hurt my wrist/hand on Tuesday during tennis. Good news is that it is not fractured, bad news is that I still only have one hand that I can use. I am hoping that it heals quickly but in the meantime I will take it slow and let it rest a lot. The brace really helps it.
Today I have been making 2 batches of my red velvet cupcakes and it has taken twice as long because I am mainly only using my left hand. We have a Couples Conference tonight at my church and I am the head chair person for it. Everything has ran very smoothly, thank goodness, and I have had a lot of help.

I hope you are all off to a good week! My kids are home today as it is a school holiday. We are going to get our house in order after a crazy week and weekend. So much to do! Yesterday was nerd day at my boys' elementary school. Here are a couple of pictures. The funniest thing is that they are wearing Cricut glasses!!! They truly looked like nerds!
I hope you all had a FABULOUS Valentine's Day! My husband and I actually had a pretty comical one last night. We came to the conclusion that the most important thing about our marriage is each other and if everything doesn't go according to plan, that is okay! LOL! We waited 2 hours to be sat at a restaurant then ended up leaving and going to a fast food hamburger place and had a yummy dinner. It's all about the company you are with, right? It actually was a pretty funny situation. Here are some of our Valentine's Day pictures...
Here is a picture from our ALL PINK Valentine's Breakfast. I started this tradition about 5 years ago and it is something that my kids look forward to every Valentine's. The great thing is that I usually don't have to cook anything! I am still making my kids a hot breakfast before school every day but I didn't have to on Pink Day because of all the yummy pre-made pink stuff!!
Okay, now after looking at all the pink Yummy goodness, how about I do my weekly weigh in! LOL!! I was thinking that it would be bad this morning especially since I had a hamburger, french fries, and ice cream last night but I did okay. Here we go....

I am still wearing my Body Media arm band and finding that it is working great for me. For example, the other night I had some dessert that I probably shouldn't have. I plugged in my armband to my computer and figured out how many more calories I needed to lose for the day to cover it. Then, I turned on the music in My Pink Loft and danced off the extra 200 calories!! Normally I would have just given up for the night!

Today is such a special day around our house because it is PINK DAY!! I get up early and make the kids a breakfast that is entirely PINK! I will share the pictures with you later today. I have been busy working on 68 goodie bags for my 3 youngest boys' classes. I think they turned out soooo super cute!

This week since I've been feeling better, I have been playing a lot of tennis and running!!
Friday - 2 hours of tennis, ran 1 mile on the treadmill
Saturday - 1 1/2 hours of tennis, ran 4 miles on the treadmill (go Robyn!)
Sunday - No exercise. My day of rest.
Monday - Ran 3 miles.
Tuesday - 2 hours of high intensity tennis. Lots of running around the court!
Wednesday - 3 miles on the treadmill. Upper body weights.
I have been trying to keep track of everything I have been eating. It really does help to write it all down. I have been using the techniques I learned from Weight Watchers and making sure that I am eating enough filling foods so that I am not starving during the day. I LOOOOVE my BodyMedia arm band, even though it was kind of pricey. I figure that since I am not paying for a meeting right now, it is so worth it!

I am so excited about the new format of my blog. If you haven't read this weekend, I announced that My Pink Stamper will now have a combination of ALL of my blogs! PHEW!! Today is all about new beginnings for me. I started my weight loss journey AGAIN the week before Christmas. (I know! What a CRAZY time to start, right?) I am now down about 7 pounds with 20 more to go. It's really not about losing weight but getting my life healthy again. I just turned 39 last week and I want my body to stay young for a looooooooooooooooooong time! I am doing a combination of Body Media, Fitness Pal, Weight Watchers, Body by Vi, and lots of tennis and running! This band records my calories burned, steps I've taken, and how much good sleep I am getting. It is good to see if I need to step up my activity to burn more calories (so I can eat more, of course!!)

I hope you are all having a wonderful, peaceful day. It has been a great day so far! I have had a request to post more of what I do on my blog! Like my everyday stuff. LOL! I will try, I just don't want to bore you all! I have decided that, for now, I am going to add My Pink Loser & My Pink Photographer with My Pink Stamper. You are going to see it ALL on here! That will make it a lot easier for me right now with all that I have going on.
Today was a great day of church! I actually had a bad attitude when I first arrived, even though I knew that I had to give the opening prayer in our Sacrament meeting. I had to really focus on the opening song and try to snap out of it. After I gave the prayer I was able to feel the spirit and really enjoy my meetings. During Relief Society (the 3rd hour in which all the women meet together) I got the impression that I needed to do more for other people. I came home and started working on the thank you cards that I was planning on making last week. Here they are.
Now I am off to start dinner for my family, homemade lasagna, since today is the Sunday in the month that our worldwide church holds a personal fast. I try to make a super yummy dinner on that Sunday! I am going to also try to make some cupcakes to give out with the thank you cards for my friends. It sounds like I am doing a lot but really I have a lot of downtime! I might even throw in a game of Farkle with my kids! That is my new favorite game.
