Hot Chocolate Cupcakes for Friends!

Happy Sunday Everyone!

I hope you had a day filled with happiness!  Church this morning was wonderful.  Honestly, when I got there I was a little grumpy and didn't have a good "listening" attitude.  After about 10  minutes into the talks I started feeling that they were all for me!  When I got to my 2nd hour of church, which is Gospel Principles for me, we had a GREAT lesson on the Life of Jesus Christ.  I am so grateful to have a perfect example to try and follow.  I have so many things that I need to work on but as long as I am striving to do what my Savior would do then it will all be okay.  I know that I am not perfect and will never be.  

Okay, enough churchy stuff!  LOL!  It was just a REALLY good church Sunday!  After church we came home and I decided to make some super yummy cupcakes for some new families in our Ward and some other new friends.  I have added the recipe below and some pics.



Hot Chocolate Cupcakes
2 1/2 cups all-purpose flour
2 cups granulated sugar
1 cup cocoa powder
2 tsp baking powder
1 tsp baking soda
1 tsp salt
3 eggs
1 packet Hot Chocolate
3/4 cup milk
3/4 cup vegetable oil
1 tsp vanilla extract
  1. Preheat oven to 350 degrees and line muffin pans with cupcake liners.
  2. In bowl of stand mixer combine dry ingredients: flour, sugar, cocoa powder, baking powder, baking soda and salt.
  3. Add wet ingredients to dry ingredients: eggs, hot chocolate/milk mixture, vegetable oil and vanilla.
  4. Beat on medium speed until well combined, scraping down sides of bowl as needed.
  5. Fill cupcake liners 2/3 full with batter.
  6. Bake for 16 minutes or until toothpick inserted in center comes out clean.
  7. Let cupcakes cool in pans for 5 minutes, then remove to wire racks to finish cooling.

Thanks for sharing your church experiences with us. Although we may all come from different churches and denominations, it is encouraging to believe in one perfect Savior. The cupcakes look amazing! You make me hungry whenever you post them. Stop it! ;)

hope next time you could give some more details about the amounts... in europe.. we have differt measurings.. i know the cup measurements, but i you talk about a package.it is hard to imagine the measurement.., so please i love the recipes, but need some more details for example how much a package is ( sorry i don't want to complain) thanks for sharing this recipe

What was the recipe you used for the frosting? My frosting always turns out too runny or too stiff. I can enjoy a good cupcake without frosting but I would love to make better frosting for my husbands' sake!! I figured it was worth asking...
