Pumpkin Cupcake with Cinnamon Cream Cheese Frosting

***I found this Post in my drafts but guess I never posted it!!  This was from last Friday when I was sitting at the airport!!  LOL!  ***

Hello Everyone!!
Wow!  It's been quite an afternoon/evening.  I have been sitting at the airport for 4 hours now.  My original flight to Utah was at 2:40.  We all got on the plane, took off, and then about 20-30 minutes into the flight there is an announcement from the captain that they need to turn back around and land back in Oklahoma where we just left.  There was some problems with the pressure in the plane.  We arrived safely, got off the plane while they looked at it, and then waited 2 hours why they were deciding if we would get back on or not.  They then announced that they could not fix it and the flight was completely cancelled.  YIKES!  My niece is getting married in the morning and I really wanted to be there to represent my family.  I then found out that ALL flights going to Utah tonight were completely BOOKED!  Double YIKES!  After waiting another hour and a half I decided to go to the front desk and see if I could get something for tomorrow.  The AWESOME front desk person was able to get me a ticket on the flight later tonight!  Someone had just cancelled their flight and he slipped me right in!  Soooo awesome!!  So, here I sit on my computer waiting to board my plane........ again!  I'm just so happy that we were all safe.  

I really wanted to share this super easy Pumpkin Cupcake recipe that I actually made up all by myself.  Yaaayyy meeee!!  LOL!!  These actually did turn out!  Are you surprised?  I was!!

Pumpkin Cupcake  (This is a double batch.  Cut in half for regular batch.)2 sticks of butter (softened)3 cups sugar6 eggs2 tsp vanilla1 1/2 cans pumpkin (the regular sized can)
4 cups flour1 tsp baking soda2 tsp baking powder1/2 tsp salt3-4 tsp cinnamon2 tsp nutmeg1 to 1 1/2 cups milk 
Cream butter in a mixer.  Add sugar one cup at a time.  Add eggs cream together.  Add Vanilla & Pumpkin.  Blend well.  Add all flour, soda, powder, salt, cinnamon, nutmeg.  Mix but do not over mix.  Add 1 to 1 1/2 cups of milk.  You do not want it to be too thin or too thick.  Spoon into cupcake wrappers (I use a ice cream scooper).  Bake in a preheated 350 oven for 21-22 minutes.  
Cinnamon Cream Cheese Frosting (You will need to double if you are planning on making the double batch above.)1 block cream cheese6-7 cups powdered sugar1/4-1/2 cup milk2 tsp cinnamon1 tsp nutmeg
Cream the cream cheese in the mixer.  Add powdered sugar one cup at a time blending each one well.  Add mild a little at a time to the right consistency that you are looking for.  Add cinnamon and nutmeg, mix well.  
VIOLA!!!!

Wow!  It seems like FOREVER since I posted!  I was in Utah this past weekend for one of my niece's weddings and returned home LATE Sunday night so I have just been playing catch up/mommy since then.  Soooo much to do around here but I am LOVIN' it!!  I have still been making the kids a hot breakfast every morning and can't wait to share some of the recipes I have been using.  This morning I just made a simple pancake recipe but we added sliced bananas & raspberries with whipped cream on the top.  SUPER yummy!!!

Episode 290 - Product Review - Cricut Storage Binder

Hello Everyone!

I hope your Thursday is fantastic so far!!  I am SUPER tired and SORE from my big workout yesterday.  I went to the gym today but my heart wasn't in it so I left after 10 minutes.  At least I tried though, right??
I thought I would do a quick product review for you guys on the Cricut Storage Binder.  I ordered mine from Hallmark Scrapbook and LOVE it!!  Thanks for all the great French Toast recipes yesterday!  I decided to go with the Pepper Ridge Farms Cinnamon Swirl bread dipped in egg with vanilla.  I then sprinkled cinnamon on the top.  My kids all loved them!  We also had Hash Browns with I have NEVER made!!  LOL!!  We topped the meal off with Fat Free Chocolate Milk.  YUM!

Card Donations Needed! Great Service Project!

Hello Everyone!
I hope you are all having a FABULOUS Wednesday!  I know that I am!  I have already done the dishes, a load of laundry, made breakfast for my kids, packed 4 lunches, ran 3 miles at the gym and showered all BEFORE 9:00 am!!  It's sooo weird having all of my kids out of the house by 8:10 am!  Now if I could tackle my MOUNTAIN of laundry that needs to be hung up and put away I will be good!  LOL!
P.S.  If anyone has any great French Toast recipes, send them my way.  I'm trying something new this year.  I am making my kids a hot breakfast every morning.  I'm sacrificing some sleep but you wouldn't believe the difference it makes in the morning having everyone together for a breakfast instead of them pouring their own cereal and bickering with each other.   (We will see how long this hot breakfast thing lasts!  Two years ago I tried it and lasted 2 weeks.  LOL!  My goal is for at least the school year.)
I received the following letter and wondered if any of you have time to send a few homemade cards for her cause.  I would really appreciate it and we could really brighten someone up!

"I really need your help along with the your followers. Long story short. I am a nurse at the Medical of WI in Plastic and Reconstruction dept. We specialize in the forefront in reconstruction for breast cancer. Women from all over the country come to us.  This year I/we decided to sponsor the breakfast for breast cancer survivors. 1500 women who have had breast cancer or who are actively dealing with it now will attend this breakfast before the run/walk.

Every year prior to this year I have made something for the women and handed it out at the end of the race/walk. To my astonishment people would be grabbing-pushing aside other women and men to get what I was handing out. Ex: white and pink chocolate covered Oreos, wrapped pink and white M&M's mini bags. TO my astonishment again the cancer survivors really didn't receive what I made.

Well this year, the breakfast will be catered by one of the best chefs in Milwaukee. I feel it is an honor to sponsor this. Where you come in - Please if one person could make a card to support uplift make someone smile. It would make their day. The card would be placed at their seat. Please Please help! 

I would be happy to give my address if you could ask people to help me with this. Just 1 card - 1500 Pink Stamper followers. The Breakfast is on September 28th.

Episode 289 - Art Philosophy Overview & Simple Card

Hey Guys!!


Yep, it's that time again!  I have actually made a video for you all!  I had a little time on Friday, after the kids ALL went to school, to film a video before I needed to pick up my baby from Pre-K.  My house was eerie quiet!!  
Here's the video!!  Hope you all have a great weekend!!  I'll post pics of the card soon for you.
