Key Lime Pie Cupcakes!

Hello Everyone!  

Can you believe it is Thursday already??  Yesterday I was really in the mood for something sweet and lime.  I googled and found this great recipe for Key Lime Cupcakes.  Super easy to make.  The only problem was that I didn't have any buttermilk in my fridge so I googled how to make my own buttermilk from regular milk and found THIS.  I also decided that I wanted my frosting a little thicker and with the taste of lime so I added some of my own ingredients.  I will put a * next to what I added.  You can make it either way.

Hope you are all having a great day!  I'm a little bummed because my tennis is going to be cancelled due to rain.  I am SOOOO happy we have a rainy day because we need it here sooooo bad BUT I love my doubles tennis league and was really looking forward to it.  That's okay, we will just play a little bit more into Winter.  No biggie!!  Now onto the yummy stuff!!




Here is the recipe I got from BonAppetite 

Ingredients

CUPCAKES

  • 1 cup all purpose flour
  • 3/4 cup self-rising flour
  • 1/2 cup (1 stick) unsalted butter, room temperature
  • 1 1/4 cup sugar
  • 2 large eggs
  • 2 1/2 tablespoons fresh lime juice
  • 1 tablespoon finely grated lime peel
  • 1/4 teaspoon neon-green food coloring
  • 3/4 cup buttermilk

  • Preheat oven to 350°F. Line standard muffin pan with 12 paper liners. Whisk both flours in medium bowl. Beat butter in large bowl until smooth. Add sugar; beat to blend. Beat in eggs 1 at a time, then next 3 ingredients (batter may look curdled). Beat in flour mixture in 3 additions alternately with buttermilk in 2 additions. Spoon scant 1/3 cup batter into each liner.
  • Bake cupcakes until tester inserted into center comes out clean, 20 to 25 minutes. Cool 10 minutes. Remove from pan; cool.

FROSTING

  • 1 8-ounce package cream cheese, room temperature
  • 1 1/2 cups powdered sugar
  • 1/2 cup (1 stick) unsalted butter, room temperature
  • 1 tablespoon finely grated lime peel
  • 1/2 teaspoon vanilla extract
  • *I added 2 TBSP of fresh lime juice
  • *I added about 3 more cups of powdered sugar
  • *I added about 2-3 TBSP milk


    • Beat all ingredients in medium bowl until smooth. Spread over cupcakes.
      *I used a large pastry tip and a large pastry bag.

    Your cupcake looks so YUMMY!!! You do such a great job with icing the cupcakes, you should go into business making cupcakes - make them into bouquets and place them in baskets for center pieces - I have seen them done at weddings and they are all the rage. Great job.

    That cup cake looks so prefect! You getting to be a pro. Looks almost to pretty to eat notice I said almost...lol That butter milk trick is so handy. I dont keep it so when I have something that requires it I do that as well. Works every time.

    Well this is another must have recipe! My neighbor LOVES Key Lime and I have a key lime tree, so I shall make this instead of the pie I was going to make. BTW: Made your pumpkin cupcakes they were a big hit. I had to change up the recipe a little since the hubs bought the pre-made pumpkin filling and I had only 3 cups of powder sugar on hand. They still tasted AMAZING!

    We did key lime cupcakes for my daughters reception in July, only we added coconut extract to the frosting and toasted coconut on top! They were a HUGE hit!

    Key Lime Pie is a favorite of mine, especially when visiting Florida fresh is the best...yumm..meee! So I am going to give this Recipe a try. Wish me luck...when I get in the Kitchen I need all I can get...hmmmm! I'll have to use my Cricut cake to decorate.

    Oh man, they look so yummy! I think I can almost taste them just by looking at the pic. LOL I would love these but my guys wouldn't, so that makes me sad that I won't get to make them.     Love the cupcakes and tried them today. The cupcakes came out great but the frosting leaves something to be desired. It was to soupy I guess would be the best way to describe it. How do you get it stiff to make the peaks. Would love a tutorial on how to do this. I want my frosting to look just like yours. LOL
