Preschool Scrapbooks! Paper Doll Dress Ups & Bind it All

Good morning!

Can you believe it is Friday already?  Time is flying so fast for me this year.  You'd think that I would be bored having all of my kids in school for at least half the day but it seems like I am more busy now than ever!  My laundry has had a major overhaul and I am still keeping it under control.  Wish me luck to keep this up!  I feel like I work at the post office with all of this laundry, it just keeps coming and coming!!

Today I had the opportunity to volunteer at a local preschool in my city.  The director asked if I would come and scrapbook with the children for a last day of Summer party.  I decided that something like this with 9 children 4 and under should be a simple project.  I made all of the books ahead of time so all they did was add their picture to each page and 1 die cut.  I was sweating by the time we were finished!  Here are the books and a pic of me with the kids.

Have a great day Everyone!!!  Big hugs to you all!

Key Lime Pie Cupcakes!

Hello Everyone!

Can you believe it is Thursday already??  Yesterday I was really in the mood for something sweet and lime.  I googled and found this great recipe for Key Lime Cupcakes.  Super easy to make.  The only problem was that I didn't have any buttermilk in my fridge so I googled how to make my own buttermilk from regular milk and found THIS.  I also decided that I wanted my frosting a little thicker and with the taste of lime so I added some of my own ingredients.  I will put a * next to what I added.  You can make it either way.

Hope you are all having a great day!  I'm a little bummed because my tennis is going to be cancelled due to rain.  I am SOOOO happy we have a rainy day because we need it here sooooo bad BUT I love my doubles tennis league and was really looking forward to it.  That's okay, we will just play a little bit more into Winter.  No biggie!!  Now onto the yummy stuff!!

Here is the recipe I got from BonAppetite

  • 1 cup all purpose flour
  • 3/4 cup self-rising flour
  • 1/2 cup (1 stick) unsalted butter, room temperature
  • 1 1/4 cup sugar
  • 2 large eggs
  • 2 1/2 tablespoons fresh lime juice
  • 1 tablespoon finely grated lime peel
  • 1/4 teaspoon neon-green food coloring
  • 3/4 cup buttermilk

  • Preheat oven to 350°F. Line standard muffin pan with 12 paper liners. Whisk both flours in medium bowl. Beat butter in large bowl until smooth. Add sugar; beat to blend. Beat in eggs 1 at a time, then next 3 ingredients (batter may look curdled). Beat in flour mixture in 3 additions alternately with buttermilk in 2 additions. Spoon scant 1/3 cup batter into each liner.
  • Bake cupcakes until tester inserted into center comes out clean, 20 to 25 minutes. Cool 10 minutes. Remove from pan; cool.

  • 1 8-ounce package cream cheese, room temperature
  • 1 1/2 cups powdered sugar
  • 1/2 cup (1 stick) unsalted butter, room temperature
  • 1 tablespoon finely grated lime peel
  • 1/2 teaspoon vanilla extract
  • *I added 2 TBSP of fresh lime juice
  • *I added about 3 more cups of powdered sugar
  • *I added about 2-3 TBSP milk

    • Beat all ingredients in medium bowl until smooth. Spread over cupcakes.
*I used a large pastry tip and a large pastry bag.

    Scrapbooking Sunday!

    Hey Everyone!

Well, it's technically Saturday night since I don't usually blog much on Sunday but since I usually spend an hour or two after church working on my Family History "scrapbooking" I thought I would share some Digital Scrapbook Pages that I have made using my Photoshop Elements 6.  I think I will actually work on paper scrapbook pages after church tomorrow but like having the option of using my computer too.  I hope you all have a GREAT Sunday filled with peace and lots of happiness!!

    Hello Everyone!

I bet you are all wondering where I have been??  I know I have not posted as much as I normally do.  I had family in town this weekend, my kids started school, I am involved in some things for me, and am just trying harder to be a better mother and wife.  I LOVE my blog and spending time with you guys!!  I just need to make sure that I don't forget about some of my other responsibilities (LAUNDRY!  LOL!).  Sooooooo, you might see me just a little bit less on here but know that I am thinking about you guys.

I also wanted to direct you all to my Video library if you haven't already checked it out.  I have filmed, edited, and uploaded over 300 videos.  PHEW!!  That's a lot of hours!  LOL!  Here is the link...

Episode 291 - I Heart School (School Days Stamps!)

    Happy Friday Everyone!

Wow!  It seems that ever since school has started, I have been going and going!  I'm still getting up each morning and making a hot breakfast along with packing all the kids lunches this year.  I cannot believe I went so many years without doing this.  We can really feel the difference in our mornings.  What a GREAT & positive change.  I've also taken on a couple hobbies just for me while the kids are all in school in the morning before I pick my 4 year old up.  I bought a CUTE pink road bike and am starting to bike with a group of girls some mornings and I am playing tennis with some friends, too.  It funny because the busier I am, the more I get done.

I still need to get either padded biking shorts or a gel seat cover for my bike as I am a bit sore from my first ride yesterday.  It was REALLY hard but now I cannot wait to do it again!

Today was my daughter's first year of 8th grade Cross Country.  She did FABULOUS and was so excited that she was not last place this year.  She has gone up 5 and I know that she will continue to place higher and higher.  Today was tough because it was 100 degrees outside and all the kids were super hot!

Okay, on to my latest QUICK video!  I hope you enjoy it!!

My Pink Stamper School Days Stamp Set was used.  Click HERE to order it from a retailer!

Have a GREAT weekend everyone!!  We have my husband's brother and his family coming to stay until Tuesday.  Going to be SUPER fun!!!
