Red Velvet Cupcakes! Super Yummy-O!!

Hello Everyone!!

Tonight we had the sister missionaries from our church over for dinner so I thought I would try out a new cupcake.  Red Velvet!  I have never attempted these before and they actually turned out to be really easy (and super yummy!)  Don't worry, I only had about half of one, I'm still trying to keep track of my WW points in my head.  :)  Here is the recipe I got for the cake from All Recipes.  I ended up changing up a recipe for the cream cheese frosting and created my own.  





I love it when the missionaries come over for dinner.  It is so nice to have a gospel discussion after the desert is served.  


Red Velvet Cupcakes

Ingredients

  • 1/2 cup butter
  • 1 1/2 cups white sugar
  • 2 eggs
  • 1 cup buttermilk
  • 1 fluid ounce red food coloring
  • 1 teaspoon vanilla extract
  • 1 1/2 teaspoons baking soda
  • 1 tablespoon distilled white vinegar
  • 2 cups all-purpose flour
  • 1/3 cup unsweetened cocoa powder
  • 1 teaspoon salt

Directions

  1. Preheat oven to 350 degrees F (175 degrees C). Grease two 12 cup muffin pans or line with 20 paper baking cups.
  2. In a large bowl, beat the butter and sugar with an electric mixer until light and fluffy. Mix in the eggs, buttermilk, red food coloring and vanilla. Stir in the baking soda and vinegar. Combine the flour, cocoa powder and salt; stir into the batter just until blended. Spoon the batter into the prepared cups, dividing evenly.
  3. Bake in the preheated oven until the tops spring back when lightly pressed, 20 to 25 minutes. Cool in the pan set over a wire rack. When cool, arrange the cupcakes on a serving platter and frost with desired frosting.

Cream Cheese Frosting

8 oz of Cream Cheese
4-5 Cups Powdered Sugar
4 Tbsp Milk

Place Cream Cheese in your mixer.  Cream until softened.  Add milk.  Mix again.  Add Sugar one cup at a time until the desired consistency.  

Add to your cupcakes!!

  4. These look so good.. My kids 1st grade teacher loves the red velvet cupcakes.. I had never heard of them (4 yrs ago) I will have to try these some day.. but without cream cheese, since I don't like cream cheese.. I am sure regular frosting will be fine :) LisaMH

  9. Yummy! I make this cake but with a different icing which I will post for you tomorrow. My ex husbands family had red velvet for years as the special cake. I made it every year for him and now my son on his birthday!

  11. I am having a spooky moment yesterday I said to a friend I wanted to make Salted Caramel Macarons and Red Velvet cupcakes but needed to find recipes. Well today on yahoo.com.au there was the salted caramel recipe and next I log onto Facebook and there is the red velvet cupcake recipe, oohh in think I had better go get a lottery ticket!

  12. Oh my those look so yummy! Red velvet is my moms fav and I love it as well but I dont get to have it to often cause it cost so much to buy them. Those are ones I buy made already. Now with this recipe maybe I can make it. Get to have it more often. TSF now I want one of those cup cakes...lol

  15. Thanks for the receipt for the cake and frosting. The Red Velvet cake I have seen most of the time uses white cake and that may work for some folks, but I prefer the chocolate variety. I need to try this soon. THANNKS AGAIN,

  29. Wow Robyn! You are getting pretty good at this cupcake thing! They look so yummy and I bet they taste just as good. Alas - I am in the same boat as you. Half a cupcake would have to do. They say nothing tastes as good as how being thin feels. That is a tough call! Keep up the good work!

  34. yum!! I think i should try those. they don't seem too hard. I miss having sisters in our area. we only have elders which is fun, but i love having sisters over more. Love the work either way!
