Homemade Lasagne!!! The BEST!

I grew up on this recipe. My mom would make it for me every year on my birthday and if I had a special request. Takes a while to make but soooo worth the wait!!!

Mom's Lasagne

1 lb ground beef
1 1/2 tsp salt
2 6-ounce cans tomato paste
1 1/2 cups Parmesan cheese
2 Tbsp parsley flakes
1 tsp salt
1 lb mozzarella cheese
1 Tbsp basil
1 bay leaf
1 lb canned whole tomatoes
lasagne noodles
3 cups cottage cheese
2 beaten eggs
1/2 tsp pepper

Brown ground beef. Drain. Add basil, bay leaf, 1 1/2 tsp salt, tomatoes, tomato paste, and 9 ounces water. Simmer uncovered 30 minutes. Cook noodles, drain. Combine cottage cheese, parsley, Parmesan cheese, eggs, salt and pepper. Layer in this order: noodles, cottage cheese filling, mozzarella cheese, and meat sauce.

Bake at 350 degrees for 30 minutes. YUMMY!!!

My mom and grandma always made theirs with cottage cheese so that's how I make mine, too! We use the bow tie noodles instead of lasagna ones though...they bake faster! ;) Yum!

Robyn... I thought I was the only one who made their Lasagne with Cottage cheese.... That's how my mom made it... of course she made homemade sauce which took all day to cook...I just use Spaghetti sauce (Cheater Method!) :) My Cottage cheese just has the egg and parsley in it and to chill it for 30min. before use... I make Lasagne for Christmas... Enjoy!

I have an odd question to ask. I'm redoing my kitchen counters. I saw yours in the photo you posted and love the colors. Do you know the maker and color of your countertop?

Yummy! My husband is deathly allergic to cheese...so although I have a wonderful recipe from my mother, I don't get to make it anymore! I miss lasagne.

Much easier to put the lasagna noodles in raw although not faster. Should cook almost an hour. It works well with a soupier sauce.

Separate, and totally unrelated, question: I'm unmounting all my wood stamps. Is there any use for the wood or does it just get pitched?

Yum. We had a house guest this weekend and he made us lasagna. In fact it is the POTD on my 365 blog. He also adds sausage to his sauce and it is soooo yummy!!!

Robyn, I make lasagna for my two boys ever since they have been little guys.
They are 34 and 39 now.
no cottage cheese or rocotta cheese in it for us though, but plenty of monzarella and parmesan.
My oldest will be 40 come February 2 so I will be making it real soon.

I had a freak out moment when I saw this because it's my family's lasagne too! This is what I request for my birthday. I couldn't believe the similarities. We must be kindred spirits. :)

Hmm sounds definately delicious. Would Lasagne sheets work just as well as the noodles as we can't get Lasagne noodles in the UK.

Ricotta instead of Cottage cheese...my italian hubby would never let me live it down if I fed him lasagna with cottage cheese in it.
